Meringue Christmas Trees

Making these little trees is so much fun especially with the kids. Although I didn't have mine around as they were busy on the PS4. And then there was the 'Aren't these a bit too early?' and 'You've got the wrong thing going on..Halloween's coming first' 

These make really good snacks at home or may be just serve them to your guests or even put them on a cake to decorate. I gave them to my kids teachers a couple of years ago for Christmas. Tied them in a little transparent cone shaped bag and put a red ribbon around it. Made a perfect gift!




This recipe makes about 24 little Christmas trees


Ingredients:

2 Egg whites
1/4 tsp Cream of Tartar
100g Caster Sugar
1/4 tsp Mint Flavouring or any of your choice
Green Gel food colour
2C Nozzle
White or coloured Pearls  (Optional)


Preheat your oven at 180°C 



Line a baking tray preferably 12"x14" with baking paper. Mix your egg whites in a grease free bowl. As bubbles start to form add the Cream of Tartar. Keep beating till the egg whites start to thicken and add in the sugar at least in 3 parts beating it at the same time. Don't put in the sugar all at once as it won't give you the consistency you're looking for. 

Once all the sugar is in add the flavouring and beat till soft stiff peaks form. 

Now the fun part. Take your piping bag and painting brush and paint streaks of green gel colour in the inside. Transfer the Meringue into the piping bag. Line your baking tray and pipe the trees on them. You can decorate them with Sugar Pearls or even leave them the way they are.

Bake the trees at 1hour and 10mins.
